Dishes unusual to Maine are fresh, always new, and made with authentic Mexican recipes
With beef, pork, and chicken locally raised, and as much else from surrounding farms as he can find, chef Matthew Sanderson has made a fine resource for people on the coast who crave something with spicy, Mexican flavors. Burritos are stuffed with rajas de poblana ($5.25), strips of poblano chilies, onions, and tomatoes along with beans, rice, salsa, tomato, lettuce, and cheese; or with those same fixings and marinated steak ($5.75).
A special quesadilla came with squash blossom; from the regular menu, quesadillas can be ordered with a choice of fillings from the same list as the burrito.
Salsas like Mango Fuego, "wicked hot," or chipotle, medium hot, vary the intensity.
The Carnitos Tacos ($2.25)-topped with cheese, raw onions, cilantro, and salsa verde-are what Sanderson calls "authentic street food."
